Blessed with fertile soil and pure water, this land produces an abundance of seasonal ingredients throughout the year. Not only the fresh rice of Niigata, one of Japan's leading rice-producing regions,
but also the rich bounty of the Shinano River and the delicious mountain delicacies grown in the beautiful natural surroundings overlooking Mount Yahiko, also known as the Fuji of Echigo. In winter, the village is covered in deep snow,
and the ingredients that slowly accumulate their flavor are also exceptional.
At Uoyuki, we cherish the seasonal bounty nurtured by this land and prepare each and every dish with care.
